Tapas Recipes hake croquettes

Ingredients
- 150 gr of chopped hake without bones
- 1 leek
- 1 glass of milk
- 6 tablespoons of flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground nutmeg

- To batter and fry:
- 2 eggs
- 1 glass of breadcrumbs
- 1 teaspoon dried parsley
- 2 glasses of olive oil (for frying)
Preparation
- Wash the hake, drain and reserve.
- We clean and wash the leek, leaving the green leaves that are tender, these will give a lot of flavor to the croquettes. Once washed, we chop it and reserve a moment.
- Heat a frying pan with 2 tablespoons of olive oil, when hot add the leek, stir and fry for 10 minutes.
- After this time we add the chopped hake, stir very well and with the help of a spatula, we break the pieces of hake so that they are not too big and we can handle them well when making the croquettes, stir everything and let fry for 5 minutes.
- After this time we add 6 tablespoons of flour, mix everything very well and without stopping stirring, let everything sauté for 5 minutes over low heat, this step will make our croquettes not taste like raw flour.
- After 5 minutes, we add the glass of milk little by little, we continue stirring and in a matter of seconds, we already see how our croquette dough comes out.
- Once all the milk has been added, add the salt, black pepper and nutmeg, stir very well and let everything cook for 3 more minutes.
- After this time, we remove from the heat and place our croquette dough in a tray to cool down and thus handle the dough well without burning ourselves.
- Once the croquette dough is cold, prepare a bowl with the beaten egg, another with the breadcrumbs mixed with the teaspoon of dried parsley.
- We begin to make croquettes, we help ourselves with two spoons or with very clean hands, we are going to take small amounts of dough, we shape it into a croquette, we pass it through the beaten egg and finally through the breadcrumbs, like this one and another until finished, we place them in another tray and prepare to fry.
- We put a frying pan on the fire with the 2 glasses of oil, when it is hot we add the croquettes, we fry them on both sides for 5 minutes.
- Once fried, remove them from the pan and place them on a plate with absorbent paper to remove excess oil.
- Once the excess oil has been removed, we place them on a plate and we already have our hake croquettes.
