Carrot cake

Ingredients

  • 150ml olive oil
  • 250g of pastry flour
  • 1 sachet of yeast
  • 1 dessert spoon of vanilla essence (optional)
  • 5 large eggs (L)
  • 300g grated carrots
  • 100g walnuts and raisins
  • 100g of sugar


Preparation

  1. Preheat the oven to 180ºC.
  2. In a large bowl, add the eggs with the sugar and beat with a whisk.
  3. We add the oil little by little and we are stirring so that it is integrated.
  4. Then add the sifted flour, the yeast and stir until the mixture is homogeneous.
  5. Add the grated carrots along with the raisins and walnuts and the vanilla essence and stir well with the help of a whisk so that all the ingredients are well integrated.
  6. We spread a mold with butter on all the walls and discard the one that has not been adhered.
  7. Put the mold in the oven at 180ºC, with heat up and down, for 45-50 min.
  8. Remove the pan from the oven and let cool on a rack.
  9. Once cooled, remove from the mold and decorate with icing sugar.
