Carrot cake
Ingredients
- 150ml olive oil
- 250g of pastry flour
- 1 sachet of yeast
- 1 dessert spoon of vanilla essence (optional)
- 5 large eggs (L)
- 300g grated carrots
- 100g walnuts and raisins
- 100g of sugar
Preparation
- Preheat the oven to 180ºC.
- In a large bowl, add the eggs with the sugar and beat with a whisk.
- We add the oil little by little and we are stirring so that it is integrated.
- Then add the sifted flour, the yeast and stir until the mixture is homogeneous.
- Add the grated carrots along with the raisins and walnuts and the vanilla essence and stir well with the help of a whisk so that all the ingredients are well integrated.
- We spread a mold with butter on all the walls and discard the one that has not been adhered.
- Put the mold in the oven at 180ºC, with heat up and down, for 45-50 min.
- Remove the pan from the oven and let cool on a rack.
- Once cooled, remove from the mold and decorate with icing sugar.
